E. coli outbreaks at restaurant chains and other food-service businesses have sickened thousands. But there had been confusion as to what the causes of such infections have been, until now. And the answer is unappetizing.
A new study in England shows that the number-one cause of such outbreaks is food preparers not washing their hands after going number 2.
This study says that poor bathroom hygiene is a bigger culprit than undercooked chicken.
Additionally, around 10% of the cases studied were caused by highly antibiotic-resistant enzyme known as ESBLs. ESBLs are found in many E. coli strains.
